Four (4) 32-ounce California Reserve Dry Aged Jorge Ribsteak

 

In the world of food and wine pairings, aged steak and great Cabernet is one of the dream combinations. This lot’s winning bidder will get to experience that pairing at its peak.

The California Reserve Dry Aged Ribsteak is a full rib cut from the chuck end of the prime rib. The Jorge steak has a large amount of the ribeye "cap,” which means that it has a large amount of internal fat (in addition to marbling). Dry aged for 30-35 days, it is intensely flavored and makes for a dramatic presentation. The cut is named for Spanish wine importer Jorge Ordonez, a lover of excess in all its forms.

Starting in 1967, Molly and Donn Chappellet were the first to realize the value and significance of Pritchard Hill, now recognized as one of California’s great vineyard sites. To accompany the Jorge Ribsteak, the winning bidder’s party will experience two of their finest Cabernet releases: 2018 Hideaway, a single-vineyard wine made from 100% Cabernet Sauvignon and aged in 100% new French oak barrels and the perfectly mature 2012 Pritchard Hill, Chappellet’s flagship wine made from their best grapes and produced only in superior vintages, rated a perfect 100 points by Robert Parker.

 

INSIDER’S INFO: Wine will be shipped directly to the winning bidder from the winery. Flannery Beef steaks must be shipped through FedEx second day air. No weekend deliveries and must be shipped Wednesday through Friday. Shipping arrangements for the wine and beef, including expenses and insurance, are the sole responsibility of the winner of the auction lot.
