An eight (8)-course dinner with wine pairings at Spiaggia in Chicago, Illinois for four (4) people
James Beard award-winning chef Tony Manuano gave birth to authentic Italian cooking in Chicago, but it was a long process. Before opening Spiaggia, his flagship restaurant on Michigan Avenue, Mantuano and his wife spent a year traveling in Italy and working in restaurants such as the celebrated Dal Pescatore in Lombardy. After more than three decades and numerous Michelin stars, Spiaggia remains the guiding force in the Windy City’s Italian cuisine. And although he has opened other restaurants (Café Spiaggia, Terzo Piano, River Roast, Terralina Crafted Italian, Maddon’s Post and The Purple Pig), Spiaggia remains Tony’s spiritual home.
The menu is a roll call of classic dishes: tonno vitellato (bluefin tuna with veal aioli and smoked wagyu), tagliatelle and risotto, pollo saltimbocca and bistecca alla Fiorentina. Desserts are modern takes on timeless dishes such as bread pudding with oat, apple and spiced caramel gelato, or sweet risotto with chocolate, hazelnut and mascarpone. Executive chef Eric Lees mans the stoves, and sommelier Rachael Lowe curates the wine and beverage program. The winning bidder’s party of four will enjoy an eight-course tasting dinner with wine pairings, which will illustrate the culinary range of the kitchen and demonstrate why Spiaggia remains on top after 35 years.
