During his two decades as executive chef at The Mansion on Turtle Creek in Dallas, Dean Fearing became known as “the father of Southwestern cuisine.” Through his three cookbooks (including The Texas Food Bible) and his national TV show on the Food Network, “Entertaining at Home with Dean Fearing,” he popularized the use of ingredients such as chilis, jicama, corn tortillas and exotic game. In 2007 he left The Mansion on Turtle Creek to open his own restaurant, Fearing’s, in The Ritz-Carlton Dallas, and immediately elevated hotel dining to a new level. It specializes in “elevated American cuisine” with the philosophy of “Bold Flavors, No Borders.”
The lucky winning bidder will escort a party of eight to Fearing’s and experience a chef’s table tasting menu with wine pairings. The wide-ranging menu takes ingredients from around the country—Maryland crab, Louisiana red snapper, Joyce Farms chicken—and presents them in a unique Southwestern style with just a touch of heat; local produce receives a “farm to Fearing’s” treatment. If you’re open-minded and adventurous, there’s a new culinary experience at every turn: Don’t miss the “Not Your Mama’s Lunchbox” (a grilled cheese and house smoked BBQ beef brisket sandwich with firecracker slaw and ranch potato chips).
