The importance of proper wine storage cannot possibly be overstated. Wine ages best at a temperature of 55 degrees Fahrenheit and a humidity level of 70%. Under those conditions, wine will evolve slowly into a state of perfect maturity.
In some ways, humidity is more important than temperature. Without a correct humidity level, corks will dry out over time, causing them to shrink and allow enough oxygen to spoil the wine. In reality, the numbers 55 and 70 are general guidelines and not strict mandates; temperature can vary between 50 and 60, and a humidity range of 50-80 is probably acceptable. The important thing is to keep both numbers constant and avoid sudden drops or spikes in temperature or humidity. Extreme fluctuations can cause expansion and contraction of the wine that could push the cork out.
Other important factors include absence of light (UV rays can prematurely damage wine) and avoiding vibration, which can disturb sediment levels in older wine. Place your bottles on their sides and let them age in peace. As your wine collection grows, of course, it becomes more difficult—not to mention expensive—to maintain proper storage, and the amount of space required can also be daunting.
